example, from EPUB to EPUB, the original file is saved, so that in case the conversion is poor, you can tweak the settings and run it again. The orignal is automatically used every time you re-run the conversion. If you want the old behavior, there is a tweak that prevents calibre from saving the originals in Preferences->Tweaks.
When converting non english texts to english, use the users currect calibre interface language. This allows japanes/korean/vietnamese characters to be correctly converted. Previously they were assumed to be Chinese. Fixes #7622 (Calibre need to switch logic when converting Unicode filename into ASCII)
